4 Peaches or Nectarines
– whichever you prefer
250ml orange juice
110g caster sugar
70ml Grand Marnier
water to cover
300ml whipping cream
1-2tsp Nutellla (or sweetened Chestnut cream if you can find it)
50g toasted almond flakes
Wash fruit, cut and remove stones. Cut into bite size pieces. Place in a saucepan with orange juice, sugar, Grand Marnier and water to cover.
Bring to a simmer, stirring occasionally, until soft. 15-25 minutes.
Remove fruit with a slotted spoon and set aside in a bowl. Turn up the heat and boil poaching liquid to reduce by half. Set aside to cool.
Whip 250ml of cream until it forms firm peaks. Add the remaining 50ml to the Nutella and mix together. Then add this mix to the whipped cream. Place in a piping bag with star nozzle.
Divide the fruit into 4 serving glassed and then add poaching liquor. Stir to remove air bubbles. Leave until cold.
Pipe cream over the fruits and sprinkle with toasted almonds.
